Spinach Frittata | Easy Breakfast Recipes

Frittata recipeOne of the things that I LOVE about using Cast Iron skillets is the fact that they have soooo many uses! I love that you can cook on the stove top and move them right to the oven! Of course you need some extra pot holders, but I love how versatile they are!

One of the things I started cooking when I got my cast iron skillet was frittatas. They are really easy to make, low in sugar and carbs and you can throw just about anything in them!  You can really make any variation of this! Do you like Mexican flavors? Toss some taco meat, salsa and cheese…top with cilantro and sour cream! Do you like Denver omelets? Toss in some ham, onions, green peppers and boom! You have a Denver Omelette Frittata! The options are endless!

The other great thing about Frittatas is that you could really eat this for any meal! It’s a great breakfast for dinner, it’s a easy breakfast or brunch or even lunch! I ate it for lunch today, in fact!

I’m super lucky because my 9 yr old son is a very adventurous eater and he ate this after school for an after school snack! I love that I can just warm it up in the microwave and its ready to go!

 

Spinach tomato sausage Frittata

Tomato Spinach Sausage Frittata

What you need:

2 TBSP Butter

1 chopped onion

4 cups Spinach chopped

12 oz 3 cheese smoked sausage (or whatever sausage you have on hand!)

3 tomato chopped

12 beaten eggs

2 Cups shredded mozzarella cheese ( or whatever cheese sounds good to you!)

What to do:

Preheat Oven to 350 degrees.

Melt butter in Cast Iron skillet over medium heat.
Add chopped onion and saute till onions are translucent.Tomato Spinach Sausage Fritata-2

Add chopped sausage to skillet and saute for 5 minutes.Tomato Spinach Sausage Fritata-5

Add tomatoes and stir to distribute.Tomato Spinach Sausage Fritata-6
Beat eggs and add to pan slowly.Stir lightly and distribute all the fixins!Tomato Spinach Sausage Fritata-8

Add Mozzarella cheese and stir.
Allow to cook for a 2 minutes on stove top and stir eggs 2 times.
Move skillet to oven while eggs are still very runny.Tomato Spinach Sausage Fritata-9
Allow to cook for 20 minutes or until there is no more wiggle in the eggs. Tomato Spinach Sausage Fritata-12

An quick and easy breakfast full of protein and great flavors!
Ingredients
