An quick and easy breakfast full of protein and great flavors!

Ingredients
  • What you need:
  • 2 TBSP Butter
  • 1 chopped onion
  • 4 cups Spinach chopped
  • 12 oz 3 cheese smoked sausage (or whatever sausage you have on hand!)
  • 3 tomato chopped
  • 12 beaten eaggs
  • 2 Cups shredded mozzarella cheese ( or whatever cheese sounds good to you!)
Instructions
  1. Preheat Oven to 350 degrees.
  2. Melt butter in Cast Iron skillet over medium heat.
  3. Add chopped onion and saute till onions are translucent.
  4. Add chopped spinach and saute until spinach is wilted down., about 2 minutes.
  5. Add chopped sausage to skillet and saute for 5 minutes.
  6. Add tomatoes and stir to distribute.
  7. Beat eggs and add to pan slowly.Stir lightly and distribute all the fixins!
  8. Add Mozzarella cheese and stir.
  9. Allow to cook for a 2 minutes on stove top and stir eggs 2 times.
  10. Move skillet to oven while eggs are still very runny.
  11. Allow to cook for 20 minutes or until there is no more wiggle in the eggs.
