Tomato Spinach Sausage Frittata | Easy Breakfast Recipes

- What you need:
- 2 TBSP Butter
- 1 chopped onion
- 4 cups Spinach chopped
- 12 oz 3 cheese smoked sausage (or whatever sausage you have on hand!)
- 3 tomato chopped
- 12 beaten eaggs
- 2 Cups shredded mozzarella cheese ( or whatever cheese sounds good to you!)
- Preheat Oven to 350 degrees.
- Melt butter in Cast Iron skillet over medium heat.
- Add chopped onion and saute till onions are translucent.
- Add chopped spinach and saute until spinach is wilted down., about 2 minutes.
- Add chopped sausage to skillet and saute for 5 minutes.
- Add tomatoes and stir to distribute.
- Beat eggs and add to pan slowly.Stir lightly and distribute all the fixins!
- Add Mozzarella cheese and stir.
- Allow to cook for a 2 minutes on stove top and stir eggs 2 times.
- Move skillet to oven while eggs are still very runny.
- Allow to cook for 20 minutes or until there is no more wiggle in the eggs.
