Crispy Egg Rolls in Cast Iron Grill Pan

Crispy Egg Rolls with Dipping saucesI love to expose my family to new foods!  I love to cook for our family of 4 and 1 on the way…so having something quick and easy on a school night would be a huge help for me. One of the kinds of foods that we haven’t ventured into much is Asian cuisine. We eat a lot of Mexican, Italian and american food, so I thought that it is time to try something new! We have 1 adventurous eater (our 9 yr old) and our 12 yr old is a little less adventurous. One thing that I have found that helps her try new foods is having a dipping sauce.

I have to admit that I’ve been craving some Asian flavors lately (only 1.5 months to go before baby is here!), so that seems to sway what we are eating for dinner these days.  I also need dinners that are quick and easy to prepare. I’m not only pregnant, but we have 2 sports going on in our family and I’ve got the worst head cold I’ve had in years! Quick is GOOD!!!!!!!!!!!

I headed over to Safeway for a quick dinner option… Van’s Kitchen Chicken Egg Rolls! I found these gems in Meals to Go section at Safeway. Let me warn you…they are pretty addicting…with no added MSG and crammed full of fresh veggies! Can you get any better than that?  My kiddos won’t even know all the amazing stuff packed into these genius gems as they are crunching their way through these egg rolls!

If you’ve ever tried to make egg rolls yourself, you know how much time they take…and these are a quick lunch, dinner or snack…without all the fuss!  These also come with a delicious sweet and sour dipping sauce as well! Crispy Egg Rolls Dipping sauce recipe

 

I decided that I wanted to add a little crunch to my egg rolls, and since I don’t have a deep fryer, I knew exactly what I could use…my new cast iron grill pan! If you know me, you know I LOVE my cast iron!  They turned out sooooo good! I think I will be making my Egg Rolls crispy every single time now!

 

What you need for Van’s Kitchen Egg Rolls with a Crunch:

Cast Iron Grill Pan

4 TBSP Vegetable oil

Van’s Kitchen Egg Rolls (I used pork and vegetable)

What To Do:

Preheat Cast iron Grill pan on Medium- High heat for 3 minutes:egg-rolls-with-dipping-sauce-1

 

Simply follow the directions on the back of the package for Microwave Cooking Instructions:

Take off the top film and cook in tray for 45 seconds per roll, allow to set for 1 minute.egg-rolls-with-dipping-sauce-2

Turn down Cast Iron grill pan to Medium heat and pour in the 4 tbsp. of Vegetable oil. Allow oil to heat for 1 minute.

Add the egg rolls to the hot pan across the grill marks (see photo). Leave them alone for 2- 3 minutes, or until you can see grill marks on the egg roll.Crispy Egg Rolls With Dipping sauce

Use tongs to turn over and grill on opposite side for 2-3 minutes, or untill grill marks show.

Allow to cool for 1 minute…they will be very hot!

How to make your egg rolls crispy without a deep fryer.
Ingredients
  • Cast Iron Grill Pan
  • 4 TBSP Vegetable oil
  • Van's Kitchen Egg Rolls (I used pork and vegetable)
Instructions

Ginger Cilantro Asian Spicy Dipping sauceCilantro Ginger Spicy Dipping Sauce

What you need:

2/3 Cup Cilantro

1 TBSP apple cider vinegar (I use this one)

1/2 Cup Sugar

1/2 Olive Oil

1/2 Cup Vegetable Oil

2 TBSP Soy Sauce

2 TBSP Chili Garlic Sauce

Toss all of the ingredients into your food processor. Then blend till the cilantro is cut up and all ingredients are mixed well. This will take about 1.5 minutes.

One of the coolest thing I found out about Van’s Kitchen is that the company is run by a mother of 2 teenage boys!  How cool is that? As a working mom, I appreciate giving my money to a family & woman run company that believes in the golden rule!  I don’t know how much more “american dream” you can get! Pretty cool!

    I usually bake our egg rolls,BUT our oven is n the fritz, so I am definitely going to try them on our grill pan!! Your sauces look delicious! #client

    The grill pan works soooo good!! I won’t go back to the microwave!! I miss the crunch too much!! 😉
