Easy Baked Meatballs with grilled onions

- 2 onions- diced
- 3 tbsp olive oil
- 1 lb. ground beef
- 1 lb. ground pork sausage
- ½ cup bread crumbs
- ½ cup grated mozzarella cheese
- 2 eggs
- 1 tsp Salt
- 1 tsp pepper
- Parchment paper
- Preheat oven to 350.
- Add diced onions and olive oil to cast iron pan on medium heat. Grill till golden brown.
- In a large bowl add ground beef, sausage, bread crumbs, cheese and eggs.
- Mix with hands till just combined. Don't over mix.
- Add 1 layer Parchment over baking sheet
- Form 1-2 inch balls by hand and place evenly on baking sheet.
- Bake for 20 minutes or until golden brown.
- Check meatballs and let rest for 5 minutes.
