Ingredients
  • 2.5 Lbs ground beef
  • 1 onion chopped
  • Taco seasoning packet
  • 2 cans black beans (or 1 can black beans & 1 pinto beans)
  • 1 can sweet corn
  • 1 small can tomato sauce
  • 1 14 oz can of green enchilada sauce
  • 1 can Rotel
  • Crock Pot
  • 2 - 3 TBSP Brown Sugar (optional)
  • Optional Toppings:
  • Shredded Cheese
  • Sour Cream
  • Cilantro
  • Tortilla Chips
  • Sriacha
Instructions
  1. Saute chopped onions in large pan over medium heat. 3-5 minutes
  2. Add ground beef and brown over medium heat. 5-10 minutes
  3. While ground beef is browning, drain corn & beans & add to crock pot.
  4. Add tomato, enchilada sauce and rotel to crock pot.
  5. Add Taco Seasoning and 1 can tomato sauce to browned ground beef and stir to combine fully.
  6. Add ground beef mixture to crock pot and stir.
  7. Allow to warm for 30 minutes.
  8. Add toppings and serve!
