Easy Crock Pot Taco Soup Recipe | Fall Crock Pot Recipes

Serves: 8
- 2.5 Lbs ground beef
- 1 onion chopped
- Taco seasoning packet
- 2 cans black beans (or 1 can black beans & 1 pinto beans)
- 1 can sweet corn
- 1 small can tomato sauce
- 1 14 oz can of green enchilada sauce
- 1 can Rotel
- Crock Pot
- 2 - 3 TBSP Brown Sugar (optional)
- Optional Toppings:
- Shredded Cheese
- Sour Cream
- Cilantro
- Tortilla Chips
- Sriacha
- Saute chopped onions in large pan over medium heat. 3-5 minutes
- Add ground beef and brown over medium heat. 5-10 minutes
- While ground beef is browning, drain corn & beans & add to crock pot.
- Add tomato, enchilada sauce and rotel to crock pot.
- Add Taco Seasoning and 1 can tomato sauce to browned ground beef and stir to combine fully.
- Add ground beef mixture to crock pot and stir.
- Allow to warm for 30 minutes.
- Add toppings and serve!
