So about 8 years ago I started making this dish with my daughter. I made it every once in a while...then a few weeks ago I started ***trying**** to do meal planning and I asked my kiddos what meals they would like to add to the list of monthly meals...when my daughter said, "That fish baked in paper!!!! That is my favorite!" I realized that this easy dinner recipe could be one of our regular meals...I just hadn't made it that often! This is such a fun recipe that the kiddos can help with...my daughter started helping me with this one when she was 5 years old. All you need to do is have the ingredients all ready cut up and the kiddos can stack them on the paper and fold them up. It's so much fun for them to open their "packages", so serve them in the paper, and the kids will love to open them on their own!
One of the reasons I love this recipe so much is that I can throw it together quickly, but it feels like a gourmet meal! Its light and refreshing and is a great summer evening dinner.Ingredients:
- 4 Frozen Fillets of Tilapia
- 1 Lemon
- 1/2 Onion
- 4 tbsp Olive oil or butter
- Salt & Pepper
- Garlic powder
- Fresh Basil leaves
- Parchment Paper
What to do:
Pre-heat oven to 350 and thaw out fish. ( I usually just put them in a bowl, with the plastic still on and run hot water on them...usually takes about 5 minutes to do!)- Cut 1/4 inch slices of lemon and onion.
- Cut parchment paper
in 10 inch lengths.
- Place onion slice on middle of parchment.

- Lay fish over onion.

- Season with salt, pepper, garlic powder and 1 tbsp olive oil then 2 basil leaves and lemon slice.

- Fold length wise and fold over to secure.
8. Fold short ends in and fold over to secure. Place in 11 x 8 baking dish.
9. Bake for 25 minutes on 350. Let cool for 5 minutes. My kids loved to open the "packages" themselves.

Ingredients
- 4 Frozen Fillets of Tilapia
- 1 Lemon
- ½ Onion
- 4 tbsp Olive oil or butter
- Salt & Pepper
- Garlic powder
- Fresh Basil leaves
- Parchment Paper
Instructions
- Preheat oven to 350 degrees
- Thaw out Tilapia ( I usually just put them in a bowl of hot water in the sink, it only takes about 5 minutes to thaw, since they are so thin)
- Slice 4¼ inch slices of lemon
- Slice 4¼ inch slices of onion
- Cut 4 10 inch pieces of parchment paper
- Layer 1 slice Onion, then Tilapia
- Sprinkle with salt and pepper and garlic powder (sometimes I use Johnny's Seasoning salt)
- Drizzle with 1 TBSP Olive oil
- Add 2 leaves of Basil then 1 slice of lemon
- Fold parchment paper long ways and fold over 2 times to "seal"
- Fold ends of parchment paper in to the center.
- Bake 25 minutes at 350.
- Let cool for 5 minutes.
