Costco Day Quick Dinner: How to Get Super Mom Status

You know those days when you feel like you are running in 15 different directions and there is just too much stuff to be done??? I have those days. All. The. Time. And sometimes, on those specific days, I see these other mom’s who just seem to have it all together. They make their kids breakfast from scratch, get ready and put together (out of their yoga pants) then go volunteer in their kid’s classroom. After that, they go to the grocery store, looking fabulous, then hit the gym, do the laundry and have their house spotless by the time their kids get home from school…to their fresh out of the oven cookies. Dinner is on the table at 5 and it smells amazing.

This is what I imagine that their days are like…and I wonder how they do it.

Super Mom Status. (this is actually an imaginary thing!)

Let yourself off the hook and decide not to strive to get it all done….just take one thing at a time and enjoy the life you live. And STOP comparing your life to the other ladies at the bus stop! 🙂

Want to know how to get this elusive Super Mom Status too? Instead of trying to do it all, cheat. Cheat on the laundry, cheat on the dishes and cheat at making dinner. I will share with you my favorite cheat meal…and when you make it, you too, will achieve this status.

So…next time you go to Costco, pick up everything you need to make this quick dinner! Wow your family and keep your stress level low!! 🙂

Costco Day Quick Dinner: Chicken, Broccoli & Rice

Prep time:  10 mins

Cook time:  20 mins

Total time:  30 mins

A quick dinner you can throw together while you're putting away your food from your trip to Costco!
Ingredients
  • 1 Rotisserie Chicken from Costco
  • 2 Cups Rice
  • 4 Cups Bone Broth or Chicken Broth
  • 1 tsp salt
  • 2 cups broccoli (I buy it in the bag at Costco)
  • ½ cup to 1 cup Alfredo Sauce
  • Cheese for topping
  • Rice Cooker
Instructions
  1. Place rice and Bone or Chicken broth in Rice Cooker. Add your salt and give the rice & broth a stir. Load up the top veggie rice cooker rack with the broccoli. Press on and put away the rest of your Costco groceries. When the rice is done, pour into large bowl with cooked broccoli. Add the Alfredo Sauce and give it a good stir. Add some cheese on the top and you are ready for dinner. Add your favorite Costco side salad and you are good to go!
